So i got this RTX 3060 card, which has 8 Pin and a 6 Pin connector, but my workstation has 4 x 6pin connectors only, so should i make a 8 pin connector (by connecting the last 2 to ground) or can i just go with 2 x 6 pin connectors

Exactly. I saw an old fb post which a guy has used 6 pins without knowing that extra 2 ports are crucial for the performance and power. he busted the card within 4-5 months and he was only informed about pins when he went to claim warranty from nanotek/redline (cant remember.). it was denied

i had a similar issue. this is what i did.
first and foremost, read the psu specs carefully. if your 6pin cables can provide more than 75w you will be fine. otherwise don't do this.
most workstations come with a proprietary psus which are actually quite good. i'm a workstation user as well and mine has 2x6pin cables in it which are rated for 225w each.

    1.connected a 6pin cable directly to the 8pin port
    2. then got an 6pin to (6+2)pin adapter, plugged it into another 6pin cable and connected the 2pins of that adapter in to the remaining 2 holes in the 8pin slot. (had to peel off some excess plastic to make it fit :D)
p.s. i did some digging around and apparently those 2pins are not providing any power to the gpu. it's just some extra ground pin and a sense pin.

you can also buy a 2 x 6pin to 8pin adapter but I am not confident about those crappy chinese adapters.

find out the ratings of your 6pin cables and do the math to figure out how much the gpu might be pulling from the 8pin under full load
