It can be explained by the belief that not all human beings or animal beings get to be reborn as humans or animals.By the virtue of their karma in this life, an animal can be reborn as a higher animal or even a human.Only when a living being gets rid of all their desires, do they get rid of the cycle of birth-death-birth.
First, every individual stream of consciousness is beginning-less. They are not limited by the age of the planet or the unfolding of biological evolution, neither do new ISC's appear from nothing (when? how?). Every instant of ISC is a continuation of an earlier moment of ISC, with no beginning of the continuity. Also the first ISC on this planet was reborn from a previous life, ie from a previous instant of the same ISC.
Second, the Buddhist worldview is in no way limited to our planet, our "world system" or to what scientists have found so far. Like many modern scientists, Buddhist texts talk about numerous (or innumerable) universa, either parallel or coming one after another (appearing, lingering, dissolving, reappearing, and so on). It's naïve to think that the Big Bang just happened from nothing and from no reason. There's no guarantee that you will be reborn in the same life form, on the same planet or even in the same universe.
Third, as many above already have noted, there are several other possible life forms, not only the humans and animals we can see with our human eyes.
so for you to understand i think you should go back to the begining of how creatures were come to existence and its evolution and you should also understand how karma affect us..this will also solve you the problem of eating meat..

would like if you could explain me about creation as when i went thru 1st few pages in genesis 1-4-5 it says 'And God called the light Day, and the darkness he called Night. And the evening and the morning were the first day'
but in genesis 1-16 and 19 'And God made two great lights; the greater light to rule the day, and the lesser light to rule the night: he made the stars also.'/ 'And to rule over the day and over the night, and to divide the light from the darkness: and God saw that it was good'
which means that the first day, God created light, then separated light and darkness. but the SUN wasnt created untill the fourth day
then on genesis 1-24 to 27 it says that animals were created before man was created but in genesis 2-19 it says man was created before animals were created..maybe i havent understood it properly anyway just mentioned as i am curious..
