කියවගන්න ඔ්න උන්ට මෙන්න චැට් ජීපීටීගෙන් ගත්ත එක (සමහර ඒව උටත් කියවගන්න බැරිව බයිලා දාලද මන්දා) 97, Lady MacCallum’s Drive Kandy 31.12.61 My Dear Ruby Nandha, You must be thinking what a dirty girl I am after promising not to send you this recipe. Not that I was not going to send it, the it was sheer laziness to sit & write! Well here it is & I hope you will send me my share after it’s made. The name is Ghee Murruku. Ingredients:

½ lb Flour
½ lb Ghee
½ lb Cashews
¼ lb Raisins
¼ oz Sugar
Yellow Colouring
Cardamoms
Rose water
2 pinches of Salt
Vanilla
Method: Before the actual making of the Muruku, the starch from flour has to be extracted as follows. Put the flour into a basin & mix slightly adding water by degrees until a soft dough is formed. Cover the basin with a cloth & let it stand for about 2 hours. Next, adding water in little quantities, extract the starch. This has to be continued till all the starch is extracted and only the gluten is left, which is not used. Strain the milky liquid with the sugar, spices, flavouring & colouring into a brass pan. Keep it in the mould till it thickens using a flat wooden spoon. Add the ghee, 2 spoonfuls at a time. Warm and add the sliced cashews & the raisins. When all the ghee has been used up & the muruku is walmed to a transparent state, take it off the fire & turn on to a flat dish. Well, that is the full thing. I hope you will be able to read my writing & hope your Mama will like it too. So how was the New Year dance? I heard you all had a gala time. Don’t Auntie Kidama grumble, very high of you that Auntie did not get to present. When did the hints of your relations from Colombo — the shoppers in Ceylon who must be cleaned in your mood. Have brought all the things? I hope to go again somewhere after the 14th so. Endea Nandha’s engagement is fixed for the 26th of January, so the girl is very busy now. How are kids? I hope in the pink of health. I hope to see... ...you all soon. Hope you will write sometime. With love to all, Sumi P.S. Wishing you all a very happy New Year.
