Add in egg yolks, buttermilk, and apple juice. In a small bowl, beat egg whites until stiff peaks form then gently fold into fritter batter. Fold in finely diced apples.</li> <li data-xf-list-type="ol">In a small bowl, stir together powdered sugar and apple juice into a thin icing consistency. Set aside.</li> <li data-xf-list-type="ol">Heat oil in a heavy skillet to 375 degrees or medium-high. Drop batter into hot oil using a large spoon or metal cookie scoop. Cook until golden brown then flip. Remove crispy fritter onto paper towel to drain.</li> <li data-xf-list-type="ol">Let fritters cool slightly then dip into glaze.
