The quality of the initial fresh milk, the processing method, processing environment, quality of packaging & storage conditions are the main factors that affect the shelf-life. Also there are techniques like Nitrogen Flushing that can extend the shelf-life.Over long periods there could be a possible degradation of the efficay of the vitamins in the milk powder.
