I've tried a few different types of à la carte setups.

One time, they served the food directly to our room - we ordered like from a regular restaurant, but didn’t really know how big the portions would be. Luckily, they were flexible and customized it for us.

Another place had a proper restaurant, and we ordered and ate there. The waiter served everything, and it was pretty smooth. (usually in 4,5 star hotels)

Then there are some smaller hotels, usually in remote areas, where you have to tell them what you want a bit in advance. The first time, we guessed the portion sizes, but after that, we adjusted based on what we’d learned.
