Best would be to use the technology you are familiar with. For example, lets say you are .Net developer and someone says that Java is the best technology for developing an ERP. Just imagine amount of time you have to spend learning Java. If you are not good at any technology platform, forget about ERP, start learning a technology.

So, use the technology you are familiar with. Scope out the requirements and have them prioritized. Probably define features required for a MVP (Minimum Viable Product). Try to make "time-to-market" as short as possible.

An ERP is too much for a final year project and you better choose something else. Think about amount of development you have to do. Select something much smaller.

It is good that you are thinking from a different point of view where you can sell this product later. In my view ERP would be a total disaster for this kind of a project. Try something different. For example a mobile app or some SAAS app with a very limited scope where you will be able to market in future.
