mkv alone doesnt control those. Your source audio and video creation software control those.
mkv is a container format only.

The MEncoder (bundled with Mplayer) can. I've posted how to install it on linux (see the topics). Don't know whether MEncoder section is available for windows version (haven't tried win32)
Anyway it's code and commandline code only.

thanks for that link. I've installed some mkv_encoder.py from some program (as a by product?) and it works fine...................
