Angle grinder is nice. yes can be used for many things . But how you hold.
For sharpening knife i have used a bench grinder. https://tpmart.lk/product/ingco-bench-grinder/. (note. I have no connection with shop or brand).
But put too much pressure or wrong angle = ruined knife

yup exactly. angle grinder would be a horrible choice for sharpening knives since it can remove too much material in very little time
same thing with using a file or a tile. besides the edge being created by sharpening with them isn't even
it's ok if the knife is inexpensive garbage to begin with, but I wouldn't use it with an expensive knife
a good whetstone can give you a razor sharp finish

This is not suitable for ordinary people who are not trained in the use of power tools.

yup without a base they tend to move around which can be frustrating
you can try placing it on a rubber mat which would prevent it from moving around
