It depends on you based the stuff you are gonna shoot

If you want to take more photos and some video, i would go for a DSLR which i have already done
If you want to take only videos and your travels involve with more adventures go for GoPro

Biggest issue with DSLR is the size of it and difficulty carry, sometimes you feel to keep it and travel lightly.
Handling DSLR requires alot of skills even to take pictures. It will be much harder with videos If you are not making production grade videos no point of that effort

ප්‍රොෆෙශනල් ෆොටෝ ගන්න ඕනිනම් dslr ගන්න. ට්‍රැවලින් කරන්න ඇක්ශන් කැමරා එකක් ඕනිනම් gopro ගන්න. Gopro එකේ dslr වගේ ප්‍රොෆෙශනල් විදියට ෆොටෝ වීඩියෝ ගන්න ටිකක් අමාරුයි සෙටින්ග්ස් ලෙන්ස් නැති නිසා.

Suppose we are shooting video while runninf/ walking using DSLR. How about the quality and stability of the captured video compared to Go Pro?

If you want more stability you need to definitely invest more for a gimbal. gimbals for DSLR are more expensive than ones for goPro
Its really difficult to match the quality of a DSLR but it comes with a lot of skill, effort and cost For videography there different set of lenses you can use for the camera. So its a totally different league and sometimes you might not enjoy the adventure as you need so many stuff to do with DSLR
