I have already received a job offer and I need to get long term stay visa to germany.
How to get Germany Long Term Stay Visa Appoints from Embassy?
Appointments are not available all the time in the website.
Can we call or email them and request for appointments?

I think even though you are going to have a long term working visa, you have to enter the country in a short term visit visa. After go to the country you can finalise your working visa & get the resident permit

At least that is the process with Netherlands

That might be the reason VFS is telling you to apply for Short term visa

You need to go to the respective embassy to apply for a D Visa, with your offer details. They will most probably have an interview.

I was able to get an appointment and go for the visa interview. Adding some details below for everyone's use.

If it is a long term visa you have to go through the German embassy website.
There are many categories, make sure to chose the correct one to book your appointments.
New appointments appear in the website at 3.30AM. I have seen this on Mondays. It's better to try on other days as well.
Appointments which were cancelled by others starts appearing at 3.45AM in the morning. I was able to find one by 3.47AM on the mid of the week.

Appointments disappear within few seconds, because there are many people waiting to book and the fastest person to complete the form, gets it. My recommendation is to keep auto fill information added in your browser, and soon after you see an appointment try to book it at least within 15 to 20 seconds.
