It is hard to get all the stack and packet header architecture details in one document. If you search through each protocol you certainly can find the details. Alternatively, if you search the IETF RFC's on each of these you will find the full specs.
If not urgent I can ask one of my friends who is a Professor and in IOT development & let you know later whether a summary document is available.
