The first day in Peru we had a buffet lunch. There was their Peruvian signature ceviche. Many were reluctant to eat it first and didn't take a serving. I took a couple of serves, there were cut red chilli, the chef said extra hot chilli, so be careful, told him that we are from SL, not to worry. My son also took a serving, he usually follows me. All others in the group refused saying it's raw.
At the table, my wife tried a bit from my son's plate and said it's good and doesn't really feel uncooked. Then all others followed in a line to get Ceviche. It's a mix of various kinds of fish, onion, garlic, tomato, jalapeno, a touch of olive oil, marinated in lime juice and probably a light vinegar. Cut red chilli as a topping.
