Few things to Try at home :-
1. to Test Active Listening :- on your phone, Open Facebook app, While you are browsing through FB, Talk to your Friend about Cat Food in English. NOt Chatting. just talk in person.. Try this few times. and after 2days, youll See Cat Food Ads from Facebook.
2. open Gmail, Compose a New Email, Try Typing " I have attached the following form" . But dont attach anything. now try sending it, It will say "You wrote "i have attached" in your message, but there are no files attached. Send anyway?"

How they do get away? well they say these things help users and that users can turn it off(but they will still have a copy in NSA, its just dat you cant see it)

Overall, Yes doesn't matter its End to End encrypted or not. They still can access it. No device is safe.. Not even Iphone or Blackberries.
Some countries even share data. Like Five Eyes program/Fourteen Eyes.

But I dont think Sri Lanka as a country has this technology. Even if it did. our laws are way too outdated for this. So its safe to say, Sri Lankan Gov cant track you through these. They can just block you. They can track IP address, but they cant see your messages on Whatsapp. Facebook yes. cz its Public.
But If any Gov or Law enforcement request These companies(Fb/Viber/Whatsapp) They can provide these data. its Highly unlike our Gov will go through that.
