Keep the resolution as 360 x 640. But increase the bitrate. That's what increase the quality of the video.

Normal rate is like 200-250Kbps. You can increase it. You will get good quality video with 300Kbps bitrate. Don't increase it too much, then it needs lotsa processing power to play it. So that your battery will drain fastly, and sometimes the video will start to lag.

Use a free tool like "format factory" to convert videos.

Note:
If you use that software, you have to set the resolution as 640 x 360 (not as 360 x 640).

Select file type as MP4. You can play avi, flv too in the mobile if you have installed a software like SmartMovie in the mobile.
