I know you are looking for a scientific explanation, so here is my two cents:

Remember we are not talking about regular people. They have highly trained minds with extreme concentrations. Not all the arihats had achieved so called irdi too..

There is a strong connection between the body and mind. Mind is associated with some sort of energy/some form of vibration with different frequencies. I think one with extreme concentration (mind power) can control their body through these vibrations at sub-atomic levels (these are high frequency vibrations). Aura around the body, feeling free status, Ability to grasp even at extremely low time scale could be results of these.

For one to levitate his body needs to be less dense or need to have some kind of force against gravity. I dont think that we can say there is zero possibilities with the science knowledge we have. I can think of something like following:

1. Mass is energy. if someone has control over their body at sub-atomic level probably, they can exchange mass with energy with vibration and vise versa in order to be light?
2. Increasing the space between atoms/molecules to be less dense?
3. I think aura, mind energy is some kind of electromagnetic form. May be one can use it properly to defeat gravity?
4. graviton-electro magnetic interaction of some sort?
5. vibrations at sub-atomic level/quarks (string theory) can change properties of elemental particle properties by different modes of vibrations?
6. The dark energy has a connection to mind energy?
7. Change of body weight with emotions (I think i read a study about this sometimes back)?
8. Aura/electromagnetic interaction with earth magnetic field?
9. Gravity is still not understood completely, may be gravity can be controlled with some technique?

As I said before, there is a lot to investigate/experiment. So, IMO i would still leave it open. Science is clueless about mind energy/power/vibration. I think it has a lot more potential than what we think of.
