"Canola is an shortened name for Canada Oil.. There's no Canola plant. It's derived from Rapeseed. Rapeseed oil is used to make industrial lubricants and pesticides. (Rapeseed fields when flowering are beautiful)
In the 1980's its alleged that the Canadian Government paid the US an amount exceeding $50 million to place Canola on the safe list. That was how Canada marketed Canola. This I think this is now in public records and and FDA scientist came out with the story several years ago.
It's best to reduce oil, no matter which one. Also note that for generations we are used to consuming Coconut oil. Also there are other islander nations who use coconut oil. We do have a genetic ability to tolerate coconut oil.
There are very refined coconut oils available now, with enhanced MCT levels (Medium Chain Triglycerides).
Use a natural product like Coconut, Olive or even Sunflower. Also use less oil.
Eggplant comes quite nice in an air fryer when you apply a small amount of oil."
The reality is, there never was any good evidence that using margarine instead of butter cut the chances of having a heart attack or developing heart disease. Margarine had less saturated fat than butter, but it overlooked the dangers of transfats. But current margarines have only a small amount of trans fats.
Personally I prefer Butter, which is the natural product. But I eat one slice of buttered bread only once a week. I don't have a cholesterol issue but I do take Rosuvastatin 5 mg anyway.
