One purpose is to preserve milk. Powdered milk has a much longer shelf life than liquid milk, and it doesn't need to be refrigerated due to the low moisture content once it is powder - google

Do you have a herd of cows to preserve that much of milk. Afaik, finding of fresh milk is extremely difficult these days.
