it's not all this crap. Yes they do add MSG and other sauces. The main issue is that they use recycled oils from the nearest 4 star or 5 start hotels.
These oils have been used to fry all meats, fish etc and when added to fried rice gives a classic flavour that you can never replicate at home. That's the reality. Because I know the guys who recycle these oils to very reputed outlets.

MSG isn't that bad. but the problem is recycled oil, quality of meat they use.


Are these recycled oil looks light yellow in colour like regular oil? I saw few rice hotels they use light yellow colour oil same as coconut/palm oil

It's not very light in colour. They essentially run it through a filteration process and sell it to fast food outlets at a much lower price. It's got a nice flavour.
