Prep Time: 30 minutes
Cook Time: Depending on number of cutlets
Serves: 4

Ingredients:
Potatoes - 2 medium (300 g), boiled and shredded
Mixed [FONT=Georgia, Verdana, Arial, serif]Vegetables[/FONT] - 2 cups (250 g) - peas, carrots, green beans, corn, etc
Paneer - 3-4oz (100 g)
Onions - 1/4 medium (75 g), chopped very fine
Green Chilies - to taste, finely chopped
Cilantro (Coriander leaves) - 10 sprigs, finely chopped
Dried Apricots - 2, chopped finely
Assorted Nuts - 1 heaping Tbsp (example: walnuts, pine nuts, peanuts, etc)
Salt - to taste
Chaat Masala - 1 tsp
Dried Mango Powder (Amchur) - 1 tsp
Red Chili Powder - 1/2 tsp or to taste
Roasted Cumin Powder - 1/2 tsp
[FONT=Georgia, Verdana, Arial, serif]Bread Crumbs[/FONT] - for coating
Oil - for pan frying

Method:
1. Put the Mixed Vegetables in a food processor and pulse them so as to not make a paste.
2. Pour into a bowl.
3. Do the same with the Paneer and pour into a bowl.
4. Into the bowl, add in Potatoes, Onions, Green Chillies, Cilantro, Mixed Nuts and Dried Apricots.
5. Mix gently but well.
6. Add in the dry spices: Salt, Chaat Masala, Dry Mango Powder, Roasted Cumin Powder and Red Chilli Powder.
7. Again mix well but gently.
8. Heat Tawa/skillet and drizzle a little Oil on it.
9. Meanwhile, put the bread crumbs in a plate.
10. Make cutlets to the size desired, roll in the crumbs and coat well with the bread crumbs.
11. Place on the skillet once the oil is hot.
12. Allow the Cutlets to get golden brown on the bottom side.
13. Drizzle a little Oil on the top side of the Cutlets before flipping them over.
14. Allow the other side to get brown as well.
15. Take off the Tawa and serve hot with some chutney or ketchup.

Tips:
1. Mix the Salt into the mixture when you are ready to make the Cutlets. Salt always tends to make the vegetables sweat and then it will be difficult to form the cutlets.
2. Make the Cutlets and semi-cook them (without Oil) and then freeze them. When ready to eat, semi-thaw and cook with oil. Gives a freash taste and you instantly have snacks or patties.

[FONT=Georgia, Verdana, Arial, serif]Ingredients[/FONT]:
Dates - 20 (5oz or 150g)
Water - approx 1/2 cup, for soaking
Walnuts - 1/4 cup (30 g), chopped
[FONT=Georgia, Verdana, Arial, serif]Sweetened Condensed Milk[/FONT] - 14oz can (396g)
[FONT=Georgia, Verdana, Arial, serif]Unsalted Butter[/FONT] - 1 stick (4oz or 113g)
[FONT=Georgia, Verdana, Arial, serif]Baking Soda[/FONT] - 1 1/2 tsp
Baking Powder - 1 tsp
All-purpose Flour - 1 1/4 cups (183 g)

Method:
1. Soak the Dates in warm water for about 30 minutes just to soften them.
2. Sift the [FONT=Georgia, Verdana, Arial, serif]All Purpose Flour[/FONT] along with the Baking Powder and the Baking Soda.
3. Press down on any lumps.
4. Make a paste of the Dates using as little water as possible either in a blender or a food processor.
5. Melt the butter so it is soft and mix it to the dry ingredients (flour, baking soda & baking powder).
6. Mix in the Dates paste and the Sweetened Condensed Milk. Mix well.
7. Fold in the Walnuts as well.
8. Spray/Grease a baking pan and pour the batter into it.
9. Bake in a pre-heated oven (180 degrees C/350 degrees F) for 40 minutes in the center of the oven.
10. Once done, take the cake out and allow it to stand for 5 minutes before taking it out of the pan.
11. Loosen the edges and flip the cake onto a cooling rack.
12. Serve hot or cold.
Annam’s tips:
1. Replace the dates with fruit - pineapples (sounds good)!
2. If you are planning to frost the cake, allow it to cool all the way thru.
3.When the oven door is open in-between according to the temperature some oven will need 50min to bake.
4. When too much water is added to dates while grinding,ihe cake tends to sink.

Ingredients:
Mango Pulp - 30 oz can
Sweetened Condensed Milk - 14 oz can
Whipped Topping - 8 oz container
Fresh Mango - cubed, optional

Method:
1. In a big bowl pour in the Mango Pulp, Condensed Milk and the Whipped Topping.
2. Fold them in very well but very gently.
3. Pour into a dish with a tight fitting lid.
4. Cover and place [FONT=Georgia, Verdana, Arial, serif]in the freezer[/FONT] for 2 hours.
5. After 2 hours, mix in the cubed Mango pieces and return dish to the freezer.
6. Allow it to freeze for another 3 hours or so.
7. Serve and enjoy!
Tips:
1. Fresh Mango plup can be substituted for the can.
2. Add in Tutti-fruiti, nuts, saffron or cubes of cake for a variation.
3. Great make-ahead dessert.

Cheesy meatballs with spaghetti

Ingredients (serves 4)
  • 500g lean beef mince
  • 1 egg, lightly beaten
  • 1 cup grated tasty cheese
  • 1 onion, finely chopped
  • 1/4 cup chopped basil
  • 1 tbs olive oil
  • 570g jar tomato, onion & basil chunky sauce
  • 400g dried spaghetti
  • Basil leaves to serve
Method
  1. Combine mince, egg, cheese, onion and basil. Season and roll into balls.
  2. Heat oil in a large non-stick frying pan. Cook half the meatballs for 4-5 minutes. Remove and repeat.
  3. Return the meatballs to the pan and pour over sauce. Cover, cook over a medium heat for 20 minutes until cooked through.
  4. Cook spaghetti in a large pan of boiling water, as per packet directions. Drain and place in bowl. Spoon over meatballs and sauce. Serve with basil leaves.

Cooked Rice: 2 cups
Oil - 1 Tbsp
[FONT=Georgia, Verdana, Arial, serif]Mustard Seeds[/FONT] - 1/4 tsp
Cumin Seeds - 1/4 tsp
Whole Dry Red Chili - 1
[FONT=Georgia, Verdana, Arial, serif]Curry Leaves[/FONT] - few
Turmeric Powder - 1/8 tsp
Asafoetida - pinch
Green Chilies - to taste, finely chopped
Onions - 1/2 medium, sliced
Garlic - 2-3 cloves, finely chopped
Salt - to taste
Lemon/Lime Juice - to taste
Cilantro (Coriander) - finely chopped for garnishing

Method:
1. Heat Oil in a medium pan on medium heat.
2. Add Mustard Seeds and allow them to pop.
3. Add Cumin Seeds and allow them to turn golden brown.
4. Add Dry Red Chili, Curry Leaves, Turmeric Powder and Asafoetida.
5. Add Green Chilies, Onions and Garlic. Mix and cook until Onions are light golden brown but not over-cooked.
6. Add salt and Cooked Rice (pre-heat for 1 minute in the microwave) and mix well.
7. Add Lime/Lemon Juice to taste.
8. Garnish with Cilantro (Coriander) leaves.

Ingredients:
Semi-Sweet Baking Chocolate - [FONT=Georgia, Verdana, Arial, serif]4 oz[/FONT] (113g)
Butter - 4 oz (113g)
Eggs - 2
Sugar - 1/3 cup (75 g)
All-purpose Flour - 1/4 cup (40g)
Butter - for greasing ramekins

Method:
1. In a double boiler, melt chocolate.
2. In a medium mixing bowl, beat Eggs and Sugar until light and fluffy.
3. Once chocolate is melted, remove pan from heat and add in butter. Mix until the butter melts fully.
4. Add chocolate/butter mixture into the eggs, add all-purpose flour and mix until well incorporated.
5. Butter bottom and sides of ramekins (small glass/porcelain bowls) and pour in mixture about 3/4 way full.
6. Place ramekins on a baking tray and bake at 350 degrees Fahrenheit (180 C) for 10 - 15 minutes. Shorter for gooey (molten) inside, longer for stiff inside.
7. Serve hot with vanilla ice cream.
