Well this is how it happens

Some fuckers use proxies (quite rare now.) If there is SSL interception enabled (How to check --> look at the certificate what they show when you go to a site), They can see what your doing on HTTPS sites. But they mainly use it to allow/block sites. Some banks have DLP enabled.

Firewalls --> instead of SSL interception they try to use the SNI to detect the site. So they will not look at what your actual data is.

So if you are browsing porn or some other shitty site your IP and site you went will be logged.


Regarding software --> most companies have either SCCM, Software management tools like manage engine or AVs like kaspersky which allow you to take an inventry of what you installed or ran. So that is how they know if you downloaded some shit or not.
Other than that some new so called next gen AVs (crowdstrike, SentinelOne etc) can detect applications installed of files (exes) downloaded.
