No idea about Canada. In USA it could be between 1 week to 6 month maximum. its depend on how much immigration officer offer you on arrival to US. But If you have multiple Visa, you can leave and come back again.

go out side of the country and come back. but im not sure how long you have to stay out side of the country.

He's referring to 'multiple entry' visa. You can get it for a few years but at a time can stay Max 6 months.
