UGC will recognize any degree awarded from any university listed under Commonwealth Universities Yearbook (
www.acu.ac.uk) or International Handbook of Universities (
www.whed.net). There are thousands of universities in these two lists. Among them, there are many small scale, not-so-famous, private universities in India which often offer highly affordable degrees that can be done easily. Try to find such a university that offer online or distance education degrees. I guess this is the cheapest and easiest option. If your employer wouldn't care about UGC approval, then you can simply buy any degree from an unaccredited university/college (degree mill) which often provide degrees only based on the experience. But keep in mind, although you get a certificate, you might not get the necessary knowledge.
